Ingredients
2 cups mashed potatoes
1 cup shredded cheddar cheese
2 eggs
¼ cup all-purpose flour
2 tbsp chopped green onions
Salt and pepper to taste
Oil for fryingIn a bowl mix mashed potatoes, cheese, eggs, flour, green onions, salt, and pepper.
Form the mixture into small patties.
Heat oil in a skillet over medium heat.
Fry patties 3–4 minutes per side until golden brown.
Drain on paper towels and serve warm.
