No-Bake Mango Pie
Creamy, fruity, and refreshing — perfect for warm days!
This chilled mango pie combines creamy textures with tropical flavor and a buttery cookie crust. Easy to make and perfect for sharing!
Ingredients
For the crust:
1 package of Maria cookies (or graham crackers)
1 stick of unsalted butter, melted
For the filling:
1 block cream cheese
1 can sweetened condensed milk
1 cup plain yogurt
Juice of 1 lemon
1 cup ripe mango (for blending)
2 cups diced mango (for folding into the filling)
1½ packets of unflavored gelatin (each packet is approx. 7g)
3 tablespoons water
Instructions
Prepare the crust:
Crush the Maria cookies until fine and sandy.
Mix with the melted butter until you get a crumbly dough.
Press firmly into the base of a round pan to form the crust. Refrigerate while preparing the filling.Hydrate the gelatin:
In a small bowl, add the gelatin to 3 tablespoons of water.
Let sit for a few minutes, then microwave for 10–15 seconds until fully dissolved.Blend the base filling:
In a blender, combine the cream cheese, condensed milk, yogurt, lemon juice, and 1 cup of mango.
Blend until smooth and creamy.Add the gelatin:
Pour in the dissolved gelatin and blend again briefly until fully incorporated.Fold in the diced mango:
Transfer the mixture to a large bowl and gently fold in the 2 cups of diced mango.Chill the pie:
Pour the mixture over the cookie crust and spread evenly.
Refrigerate for at least 4 hours, or until fully set.Decorate and serve:
Garnish with more mango chunks, whipped cream, or berries before serving. Slice and enjoy!
Notes
Ataulfo mangoes are ideal due to their natural sweetness and creamy texture.
For a layered effect, chill part of the filling before adding a second fruit layer on top.
This pie can be made a day in advance — even better the next day!
