Easy Slow Cooker Chicken Stroganoff Recipe
This Slow Cooker Chicken Stroganoff is a creamy, comforting dish that’s rich in flavor and incredibly easy to prepare. Tender chunks of chicken are slow-cooked with mushrooms, onions, and a savory cream sauce—perfect for serving over egg noodles, rice, or mashed potatoes.
Ingredients:
1 ½ to 2 lbs boneless, skinless chicken breasts or thighs
1 small onion, finely chopped
2 cloves garlic, minced
1 can (10.5 oz) condensed cream of chicken soup
1 cup chicken broth
1 packet (1 oz) dry ranch dressing mix or onion soup mix (optional but adds flavor)
8 oz sliced mushrooms (fresh or canned)
1 teaspoon paprika (optional, for depth)
Salt and pepper, to taste
8 oz cream cheese, cubed and softened
1/2 cup sour cream
Cooked egg noodles or rice, for serving
Fresh parsley, for garnish (optional)
Instructions:
1. Prepare the Slow Cooker:
Lightly grease the insert of your slow cooker or use a liner for easy cleanup.
2. Add Ingredients:
Place the chicken, onion, garlic, mushrooms, cream of chicken soup, chicken broth, ranch dressing mix (if using), paprika, salt, and pepper into the slow cooker.
Stir gently to combine and coat the chicken with the sauce.
3. Cook:
Cover and cook on low for 5–6 hours or high for 3–4 hours, until the chicken is fully cooked and tender.
4. Shred the Chicken:
Once cooked, remove the chicken and shred it using two forks. Return the shredded chicken to the slow cooker.
5. Add Cream Cheese and Sour Cream:
Stir in the cream cheese and sour cream until fully melted and blended into the sauce.
Let cook on low for an additional 15–20 minutes, stirring occasionally, until everything is creamy and well mixed.
6. Serve:
Serve hot over cooked egg noodles, rice, or mashed potatoes.
Garnish with chopped parsley if desired.
Tips:
Thighs vs. Breasts: Chicken thighs stay juicier in the slow cooker, but breasts work well if not overcooked.
Make It Lighter: Use light cream cheese and low-fat sour cream to reduce calories.
Add Veggies: Feel free to add frozen peas, spinach, or even broccoli during the last 30 minutes of cooking.
This Easy Slow Cooker Chicken Stroganoff is a fuss-free, family-friendly meal that delivers comforting flavor with minimal effort. Perfect for weeknights or meal prepping!
