Healthy Chicken and Spinach Patties
These healthy chicken and spinach patties are easy to make, full of flavor, and perfect for lunch, dinner, or meal prep. They’re soft on the inside, golden on the outside, and a great way to enjoy a nutritious homemade meal with simple ingredients.
Ingredients
Makes 8 to 10 patties
- 2 cups cooked shredded chicken, preferably chicken breast
- 1 cup cooked spinach, well drained
- 1 egg
- 3 tablespoons oats or breadcrumbs
- 2 tablespoons grated cheese (optional)
- 1 garlic clove, minced
- 2 tablespoons chopped onion
- Salt and pepper to taste
- 1 teaspoon oil, for cooking
Instructions
1. Prepare the ingredients
Cook the chicken until fully done, whether boiled, baked, or pan-cooked. Shred it as finely as possible.
Cook the spinach and drain it very well, pressing out all excess water. This step is very important so the patties don’t turn out too soft.
2. Make the mixture
In a large bowl, combine:
- shredded chicken
- chopped spinach
- egg
- oats or breadcrumbs
- garlic and onion
- grated cheese, if using
- salt and pepper
Mix everything well until fully combined.
3. Adjust the texture
If the mixture feels too wet, add 1 or 2 extra tablespoons of oats.
If it feels too dry, add 1 tablespoon of milk or water.
The mixture should be firm and easy to shape.
4. Shape the patties
Take portions with your hands, shape them into balls, and gently flatten them into small burger-like patties.
Try not to make them too thick so they cook evenly.
5. Cook
Heat a nonstick skillet with a little oil over medium heat.
Cook the patties for 3 to 4 minutes per side, until golden on the outside and fully cooked inside.
