Healthy Flourless Banana Loaf
If you have a few overripe bananas sitting on the counter, this easy and delicious loaf is the perfect way to use them. It’s soft, moist, naturally sweet, and made without flour, making it a great option for breakfast, snack time, or a light dessert.
Ingredients
- 3 very ripe bananas
- 1/4 cup coconut oil
(you can also use sunflower oil or any oil you have on hand) - 1/2 cup oats
(rolled oats or quick oats both work) - 1 tablespoon cocoa powder
(unsweetened or sweetened, whichever you prefer) - 1 teaspoon baking powder
- 2 tablespoons honey
(adjust to taste)
Instructions
- Peel the bananas and place them in a large bowl. Mash them well with a fork until smooth.
- Add the oil and stir until combined.
- Mix in the oats, cocoa powder, and baking powder.
- Add the honey and stir everything together until the batter is well combined.
- Pour the mixture into a loaf pan. You can lightly grease the pan or line it with parchment paper.
- Bake in a preheated oven at 180°C (350°F) for about 30 minutes, or until a toothpick inserted in the center comes out clean.
- Let it cool slightly before slicing.
This loaf is perfect for breakfast or an afternoon snack. It’s moist, tender, chocolatey, and best of all, completely flourless.
