Mango Carlota
This Mango Carlota is a fresh, creamy, and delicious no-bake dessert that feels perfect for warm days or any time you want something fruity and easy to make. With layers of Maria cookies and a smooth mango yogurt filling, it comes out light, refreshing, and full of tropical flavor.

Ingredients
- 3 mangoes
- 2 cups plain unsweetened yogurt
- 1 tablespoon honey or natural sweetener
- 1 teaspoon vanilla
- 1 package Maria-style cookies
- 2 tablespoons unflavored gelatin
- 1/4 cup water (for the gelatin)
For decoration
- 1 mango, cut into cubes
Preparation
1. Make the mango mixture
Place the mango pulp, plain yogurt, honey, and vanilla into a blender. Blend until smooth and thick.
2. Prepare the gelatin
Sprinkle the unflavored gelatin over the water and let it hydrate for 5 minutes. Then dissolve it over a double boiler, stirring well until smooth.
3. Add the gelatin
Pour the dissolved gelatin into the mango mixture while blending, making sure it is fully incorporated and free of lumps.
4. Start layering
Arrange a layer of Maria cookies neatly in the bottom of a mold or dish. Add a layer of the mango mixture and spread it evenly.
5. Repeat the layers
Continue alternating layers of cookies and mango mixture until all the mixture is used.
6. Decorate
Top with mango cubes.
7. Chill
Refrigerate for at least 4 to 6 hours, or until fully firm.
8. Serve
Cut into portions and serve cold.
