Delicious Baked Chicken Hand Pies
These baked chicken hand pies are golden, savory, and full of homemade flavor. Ingredients
For the dough
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 6 tablespoons margarine
- 2 eggs
- 1 teaspoon salt
- 1 egg yolk, for brushing
For the filling
- 150 g cooked shredded chicken
- 1/2 onion, chopped
- 1/2 tablespoon tomato sauce
- 1/2 can peas
- 1 hard-boiled egg, chopped
- A pinch of salt
- A pinch of black pepper
Preparation
1. Make the filling
In a bowl, combine the shredded chicken, chopped onion, tomato sauce, peas, chopped hard-boiled egg, salt, and black pepper. Mix everything well and set aside.
2. Prepare the dough
In a large bowl, add the flour, baking powder, margarine, lightly beaten eggs, and salt.
Mix until the dough becomes smooth and starts pulling away from your hands. If needed, add a little more flour. The dough should feel slightly moist and crumbly, but still easy to work with.
Divide the dough into 4 portions.
3. Shape the hand pies
Place one portion of dough between two sheets of plastic wrap and roll it out with a rolling pin.
Remove the top sheet of plastic wrap and place a generous spoonful of filling in the center. Using the bottom sheet of plastic wrap, fold the dough over to form a half-moon shape. Trim the edges if needed and press them closed with the tines of a fork.
Repeat with the remaining dough portions.
4. Brush and bake
Place the pies on a baking tray and brush the tops with egg yolk.
Bake in a preheated hot oven for about 20 minutes, or until golden.
