Pork Tenderloin in Beer Sauce
This pork tenderloin in beer sauce is a rich, comforting, and flavorful dish that feels perfect for a special lunch or a cozy homemade dinner. The pork is browned until golden, then slowly cooked with onion, garlic, mushrooms, broth, and beer until it becomes tender and full of flavor. The addition of dried apricots gives the sauce a subtle sweetness that balances everything beautifully.
It’s one of those dishes that looks elegant on the table but is actually very simple to prepare.
Ingredients
- 1 pork tenderloin
- 1 large onion
- 3 garlic cloves
- 350 g mushrooms
- 1 can of beer
- 200 g chicken broth or water
- A handful of dried apricots
- Oil
- Salt and pepper
Preparation
1. Prepare the vegetables
Cut the onion into thin strips, slice the garlic, and cut the mushrooms into quarters. Set aside.
2. Brown the pork
Season the pork tenderloin with salt and pepper to taste. In a skillet with hot oil, brown it well on all sides.
3. Cook the onion and garlic
Remove the pork from the pan and add the onion and garlic. Cook until they begin to soften and turn golden.
4. Add the mushrooms
Add the mushrooms and cook until they start to take on some color. Lower the heat if needed.
5. Add the beer
Pour in the beer and let it cook for about 5 minutes so the alcohol can evaporate.
6. Return the pork
Place the pork tenderloin back in the pan and adjust the salt if needed.
7. Add broth and apricots
Add the chicken broth or water and the dried apricots. Cover and let everything cook over low heat for about 20 minutes.
8. Reduce the sauce
Remove the pork from the pan and let the sauce reduce over higher heat for about 5 minutes.
9. Slice and serve
Slice the pork into pieces about a finger thick. Serve it on a platter over the vegetables and spoon the sauce on top.
Result
The pork comes out tender and juicy, while the sauce is savory, slightly sweet, and full of depth.
