Grandma’s Never-Fail Apple Cake

Ingredients
For the syrup
- 1 cup sugar
- 1/2 cup water
For the topping
- 2 apples, sliced

For the batter
- 4 eggs
- 1 cup sugar
- 1/2 cup oil
- 1/2 cup milk
- 2 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 apple, chopped

- 24 cm cake pan
- Oven preheated to 180°C (350°F)
Instructions
1. Prepare the pan
Lightly grease a 24 cm cake pan with a little oil or butter. Set aside.
2. Make the syrup
Place 1 cup of sugar and 1/2 cup of water in a saucepan. Cook over medium heat, watching carefully, until it becomes a light golden syrup.
3. Arrange the apples
Carefully pour the syrup into the bottom of the prepared pan. Arrange the apple slices over the syrup, covering the base as evenly as possible. Sprinkle cinnamon over the apples to taste.
4. Beat the eggs and sugar
In a large bowl, beat the 4 eggs with 1 cup of sugar until the mixture becomes lighter in color and slightly fluffy.
5. Add the wet ingredients
Pour in the 1/2 cup oil and 1/2 cup milk. Mix well until combined.
6. Add the dry ingredients
Gradually add the 2 1/2 cups flour and 1 tablespoon baking powder. Add the chopped apple and gently mix until you have a smooth batter with no lumps. Do not overmix, just stir until everything comes together.
7. Pour into the pan
Carefully pour the batter over the arranged apples in the pan. Smooth the top with a spoon or spatula.
8. Bake
Bake in the preheated oven at 180°C (350°F) for about 40 minutes, or until a toothpick inserted in the center comes out clean.
9. Let it rest
Remove the cake from the oven and let it rest for 10 to 15 minutes so it cools slightly.
10. Unmold
Run a knife carefully around the edges of the pan. While the cake is still warm, invert it onto a large plate so the caramelized apples end up on top.
11. Serve
Let it cool a little more before serving. It is delicious on its own or served with cream, ice cream, or an extra sprinkle of cinnamon.
