Ingredients

Makes 4 calzones

  • 1 pizza dough (homemade or store-bought)
  • 150 g cooked ham, diced or cut into strips
  • 150 g shredded mozzarella
  • 50 g grated Emmental or ComtΓ© (optional, for more flavor)
  • 4 tablespoons thick cream or tomato sauce
  • 1 teaspoon dried oregano
  • Salt and pepper
  • 1 egg yolk
  • 1 tablespoon milk

Instructions

1. Preheat the oven

Preheat your oven to 200°C (400°F) with fan if available.

2. Divide and shape the dough

Divide the pizza dough into 4 equal balls. Roll each one out into a circle about 20 cm wide.

3. Add the filling

In the center of each dough circle:

  • Spread 1 tablespoon of thick cream or tomato sauce
  • Add the ham
  • Add the mozzarella and the grated Emmental or ComtΓ© if using
  • Sprinkle with oregano, salt, and pepper

4. Fold and seal

Fold each circle over to create a half-moon shape. Press the edges firmly with your fingers or seal them with a fork.

Place the calzones on a baking tray lined with parchment paper.

5. Brush with egg wash

Mix the egg yolk with the milk. Brush the tops of the calzones with this mixture to help them turn beautifully golden while baking.

6. Bake

Bake for 20 to 25 minutes, or until the calzones are puffed and nicely golden.


Tips

  • Add sautΓ©ed mushrooms, caramelized onions, or spinach for extra flavor.
  • Sprinkle a little fine semolina under the calzones before baking if you want a crispier bottom.
  • Serve them hot so the cheese stays perfectly melted inside.
