🕒 Recipe Overview

🛒 Ingredients

🍇 For the Fruit Mix

  • 250g mixed dried fruits

1️⃣ Prepare the Oven & Pan

  • Grease and line an 8-inch round cake pan with parchment paper.

2️⃣ Prepare the Fruit Mixture

  • In a bowl, combine dried fruits, chopped nuts, and juice.
  • Mix well and set aside to soak slightly while preparing the batter.

3️⃣ Cream Butter & Sugar

  • Beat butter and sugar together until light and fluffy.

4️⃣ Add Eggs

  • Add eggs one at a time, beating well after each addition.

5️⃣ Combine Dry Ingredients

  • In a separate bowl, whisk together flour, baking powder, and salt.

6️⃣ Combine Wet & Dry

  • Add the dry ingredients to the butter mixture alternately with the milk, beginning and ending with flour.
  • Mix just until combined — do not overmix.

7️⃣ Add Flavoring

  • Stir in vanilla extract and almond extract (if using).

8️⃣ Fold in Fruit

  • Toss the fruit mixture with 1 tablespoon flour (this prevents sinking).
  • Gently fold into the batter.

9️⃣ Bake

  • Pour batter into the prepared pan and level the top.
  • Bake for 60–75 minutes, or until a skewer inserted in the center comes out clean.

  • Let the cake cool in the pan for 15 minutes.
  • Transfer to a wire rack to cool completely.
