Since I tried this variation, it has become my favorite recipe. It has no complicated ingredients, and the preparation is easy. It's all about the order of the steps and the patience to let the flavours combine as they should.

ingredients
750 g pork leg
350 g sauerkraut
1 large onion
60 g smoked bacon
4 cloves of garlic
Jump, to taste
Ground black pepper
Sweet paprika
Hot pepper (optional)
1 bay leaf
Step-by-step preparation method
1. Preparing the ingredients
Cut the meat and bacon into suitable cubes. Peel and thinly slice the onion. Rinse the sauerkraut easily if it is too salty and cut it in a few places to allow the flavours to penetrate better.

2. Frying the bacon
In a large pot, fry the smoked bacon over medium heat until it releases its fat and becomes slightly crispy.

3. Onion tempering
Add the onion over the bacon and cook until it becomes glassy and slightly golden.

4. Cooking meat
Add the diced pork leg. Season with salt, pepper, paprika and, if desired, a little hot paprika. Add the bay leaf.

The preparation is cooked over low heat until the meat becomes tender. If necessary, a little warm water can be added to prevent sticking.

5. Adding cabbage and garlic
When the meat is well browned, add the sauerkraut and crushed garlic. Mix well and leave on the heat for about 20 minutes, so that the flavors can blend harmoniously.
